Koupes - cracked wheat snack with mushroom filling.

The Italians do a snack called aranacini. The Greeks do a similar snack called Koupes using cracked wheat instead of rice.
Mum would make this during lent when we were supposed to avoid meat and use a cooked mushroom filling.
Koupes in depth instructions

Ingredients:
3 cups water
2 cups cracked wheat
2 teaspoons of baking powder
1/2 cup plain flour
4 tablespoons olive oil
1 tablespoon chopped parsley
Method:
  1. Soak the wheat in water and let it sit for 2 hours.
  2. The mix all the ingredients together.
  3. Make the mixture into balls and fill each ball with any mince filling or a cooked mushroom filling.
  4. Deep fry or bake the balls until brown and serve with lemon!

Sesame bars

This was a recipe Mum made in the summer.

Ingredients:
2 1/2 c sesame seeds
2 1/2 c peanuts
1 c honey
1 c sugar
1/2 t salt

Method:
  1. Toast the peanuts and sesame seeds in the oven.
  2. Boil the honey, sugar and salt.
  3. Boil for 20 minuted
  4. Remove from stove and stir in sesame seeds and peanuts for another minute.
  5. Lay on a foil lined tray and mark slices for separating each piece once the mixture had cooled.

Lemon slice

This was a no brainer recipe for Mum. And we loved it.
Use a square cake tin or a slice tin. The test version I did was in a large baking tray. This is how Mum used to cook it but she did double the recipe for our family!

Biscuit base:
2 T margarine
3/4 c sugar
1 egg
1 1/2 c self raising flour

Method:
  1. Beat margarine and sugar until it is creamy.
  2. Add a well beaten egg
  3. Then add sifted flour
  4. Press the mixture onto a greased baking dish.
  5. Cook in a moderate oven until brown.

Lemon layer ingredients:
1 c water
Juice of 2 lemons
1/2 c sugar
1 1/2 T corn flour
cold water to dissolve the corn flour.
Method:
  1. Put water, lemon juice and sugar into a saucepan and bring to boil.
  2. Add 1 T corn flour.
  3. Mix in cold water.
  4. Spread on cooked biscuit base.
  5. Allow this to cool and set in the fridge (20 minutes).

The baking tray is too big for this portion. Use the baking tray for double the recipe.

Custard layer ingredients:
1 1/2 c milk boiled
2 T corn flour
3 T icing sugar
1 T margarine.

Method:
  1. In a saucepan have the boiled milk and add corn flour
  2. Add icing sugar and margarine.
  3. When it's creamy pour it over the lemon layer.
  4. Sprinkle with shredded coconut.
  5. Allow this to cool and set in the fridge.
Use a slice tray for this portion. Only use a baking tray for double the recipe.

Zucchini cake

Here's another of Mum's recipes.

Ingredients:
3 cups plain flour
2 t baking powder
1 t bicarb soda
1 t cinnamon
1 t nutmeg
2 t garama masala
3 eggs
1 c brown sugar
1 1/2 c safflower oil
vanilla essence
pinch salt
1 c sultanas
3 c grated zuchini (or carrots)

Method:
  1. Beat eggs, sugar, vanilla and salt until creamy.
  2. Add oil and beat again.
  3. Sift flour and mix with remaining dry ingredients together with butter mixture.
  4. Add sultanans and zuchini. Mix well with a wooden spoon.
  5. Cook at 200c
Frosting ingredients:
125 gm philly cheese
1 T butter
2 c icing sugar
vanilla essence

Beat until soft and fluffy.
